Capons
Free-range capons are even more flavorful than roasting chickens and turkey, and as easy to roast as a chicken. Capons are surgically caponized, 8 to 12 lbs. mature birds prepared for market when 18-20 weeks old. Capon, Capon Breast and Boneless Capon Breasts are available year

Cornish Game Hens
Cornish game hens are a breed of domestic chicken that weigh 16 to 24 ounces dressed when fully mature. They have a light savory slightly stronger flavor than chicken, but not as strong as partridge or quail. Cornish game hens are available fresh year around.
Poussin
Eberly's tender, light flavored Poussin are 26 to 28 day-old chickens that weigh about 16 oz. each. Like all Eberly free range chicken, Poussin are fed only the best grains and fresh water, and are raised without antibiotics or growth stimulants. Poussin are available year round and packaged 24 to a case.
Bobwhite Quail
Larger than other domestically-raised Quail, Bobwhites provide 4 to 5 oz. of delectable light white meat with slight gamey flavor. They're ideal as a main course or as an appetizer for the main meal. Quail are available year around and packaged 25 to a bag.
Chukar Partridge
A small game bird similar to a Quail, but with dark meat that has a slightly stronger flavor. Partridge weigh about 16 oz. and are individually packaged 12 to a case.
Squab
Commercially raised young pigeons, squabs provide a tender, moist meat with a light gamey flavor. Prepared for market when they are 28 days old, squabs have the 1-lb. size of mature pigeons. They are available year around with 12 head per case.
Rabbits
Eberly Poultry sells only young New Zealand white rabbits that are known for their tender meat and faintly sweet flavor. Rabbit meat is high in protein and low in fat. Frying Rabbits weigh 2-½ to 3-½ lbs. and can be ordered year around in a 10 head case.
Pheasant
Mature hens and cockbirds bring a strong-flavored, healthful taste of the outdoors to the dinner table. Eberly Pheasant hens and cockbirds are 20 to 28 weeks old when prepared for market, baby pheasants are 6 weeks old. Hens weigh 2-¼ to 2-½ lbs., cockbirds are 2-½ to 3 lbs. and baby pheasants about 16 oz. Pheasants are available year around and come 12 to a case.
Guinea Hens
Guinea Hens are domestically raised gamebird similar to Pheasant, but with a lighter flavor. Their savory dark meat has a unique firm, but tender texture. Guinea Hens weigh 2-¼ to 2-½ lbs. and are individually packaged in a 12-head case. They are available year around.
Pekin ( Long Island) Duck
Originally from China, Pekin (Long Island) Ducks have become a favorite for their light, rich flavor and smooth meat found in their cream colored breast and darker brown legs and wings. These free-ranged ducks weigh 4 to 6 lbs. and are packaged 6 to a case. The are available year around.
Muscory Ducks
Muscory's are known for their lean, full flavored, firm dark meat in both hens and drakes. Hens weigh 3 ½ to 4 lbs. and drakes weigh 6 to 8 lbs. They are available year around. The Muscovy's are available in 3 case configurations.

Geese
